off and not off

Always something to do.

Gyros Meat.
Not good. Not bad.
Just Needs something.

There’s so much to do.
Go here. Go there.
Then mow. Then clean.
Then organize.

As a Carnivore, I’m trying to
Keep a stash of a few weeks food.
It’s not easy.
The food supply line
Is crazy right now.
I should find a local supplier
And use them for beef.

I think Miss ‘Rona
Is going to be our guest all summer.
I’m getting ready for Phase 2.

  1. Well, meat is getting more difficult to acquire, and more expensive. If it were only me and I were rich, I would simply survive on real butter, bacon, and steak, with eggs a few times a week. But alas, six of the kids live at home right now, and they like their chicken breast, and nachos, and rice, and all that crapola. Our meals always have meat as the basis, though, they eat the carbs, I don't...except for tortilla chips. Lime tortilla chips, they are my weakness. I am not bored during this quarantine, I always find more and more to do. One daughter is an NP and is helping out in a crisis hospital, overrun with the virus, (lots of their nurses have gotten sick), and she asked me to make some surgical caps. I make a triple batch of cookies about once a week to send in to work with one of my nurse daughters, I don't eat them myself, but they love them. Now a night-shift daughter of mine, who works exclusively on a Covid floor, wants cookies for her co-workers...so basically, I don't even "work", but I'm always working anyways ha.

  2. That gyro meat has a lot of fillers... yuck! Ya know growing up in ole south TX my parents would buy a cow, have the local butcher processor hack it up and they would box it up. We'd take it home, set up our assembly line and get after it. Mom or Dad at the table with the wood block covering to protect the antique underneath with knife at the ready. They'd cut it up the large pieces into manageable size and pass it to the next person with the butcher wrap and tape who would portion it out. That person would pass it to the next who would tape, label and date and pass it off to the next who would run it to the deep freeze to then put into the appropriate section. Sections all dictated out years ago by Mom. We bought beef once a year and ate it almost everyday. *memories* :)
