party prep


Perfect preparation and pretty presentation. 
Plates and all go in the fridge. 
Prep as much as you can ahead of time. 
You can chop and prep. 


Onion Rings wrapped with Bacon 


Next time, I’ll put 2 rings 
Per slice of Bacon. 
Sweet Yellow Onion 
Are great for this. 


Dan-O’s  is my current 
Favorite flavor line. 
Penzie’s is also great. 


Freeze String Cheese the night before. 
Season it, wrap in Bacon. 
Bake at 375° until the Bacon is done 


Use parchment paper. 
Or you’ll have a mess like this!
The Blooper Real. 


Most of the Cheese
leaked out the ends. 
Hahaha- Crunchy Cheese


An old favorite. 
Make these the night before. 
They even sell these ready-made
 in the grocery stores now. 


This is shredded Cheddar Cheese 
With Cream Cheese filling. 


You can also use other peppers.
But here in Texas, you know…


It’s all about the Jalapeños. Lol. 


I like eating at home. 
You control the seasoning and the oils. 
Fresh Chicken Wings. 
One spoonful of Baking Soda 
Per pound of Chicken. 
To add a little barrier 
And make the wings crunchier. 

I hate spending $20 for a plate 
Of junk that doesn’t taste good. 
And gives heartburn for a day!
Cook at home and get control. 


Peanut Oil. High smoke point. 
Get a meat thermometer 
And a heavy pan. 
We have an Air Fryer,  but this is good. 


After it was cooled 
I filtered the oil
And saved it for next time. 
So very little lol is used for the whole batch. 


Shrimp In Old Bay 


Coleslaw with Angel Hair Cabbage. 
Mayo, AC Vinegar, Feta Cheese. 


Simple Ham and Cheese 
Finger Foods. 


And good leftovers

And presentation!

14th low carb anniversary


In Colorado, they have 14ers. 
Mountains that are 14,000 feet tall. 
Climb to the top. Victory!


14 years ago this week,
I inadvertently started Atkins. 
And have been practicing ever since. 
I never looked back. 


I was 48 going on 80. 
I wore Men’s pants 48 waist. 
Women’s top 28. 
I didn’t get a starting weight 
Because I wasn’t planning on dieting. 
I wore a 3x Scrub. 
Probably 250?  I’m 5’2”. 


Then came that fateful (happy) snowstorm. 
I was snowed in - in a tiny fishing lodge 
In the North Rim of the Grand Canyon 
And there I stayed for days! 


Nothing to eat but Hard Boiled Eggs. 
Nothing to drink but melted snow tea. 

Eventually the power came back 
And I had about 10 days of Atkins Induction. 
Soon after, I started this blog. 


And here is today. 
I’m 62 years old and feel better than 
When I was 30!


I now wear a medium to large scrub. 
Men’s pants 36 waist. 
(Same as when I was in the army) 
I’m off wine, fairly clean eating,


I’m strong and healthy 
Reasonably so…
I take iron for anemia,
And now CBD and Kratom
For pain (broken knee). 

I’ve had COVID, 
And the vaccine (s)
Really messed me up! 
My Hospital stay was a 
life-changing experience. 
I overcame all the obstacles. 
Off PPI. No more ulcers. 
Which came from daily Advil+Wine. 
Turns out that’s not a good combination!
So I quit them both. 
😜 

I’ve had no flare ups since
 being home from the hospital. 


Many of our Original Bloggers
Have died. Many more just quit. 
Many of us are just blogging along! 

This post is dedicated to those we’ve lost. 
True friends. We’re like a bunch of 
Old Drunks, just trying to stay above water 
And make the changes. Do the work.

Broken legs. Broken hearts.

And my baby. He’s adopted. 
But I love him like he’s my own. Lol.

CAC scan


Got up at Zero Dark Thirty
To go Downtown 
For my Cardiac Artery Calcium Scan. 
It checks for plaque and calcium deposits 
In your heart and cardiac arteries. 


We call this “Big Baylor” 
Hospital in Downtown Dallas. 


The CAC is a highly specialized 
CT scan than coordinates 
with your heart beat,
And snaps the pictures 
when the heart is at rest. 
They check for calcium buildup
In the Coronary Arteries. 
The slower your pulse, the better. 
Thank you, Dr Atkins!

ZERO is a perfect score. 
I got a zero on the past 3 scans
And zero today as well! 
I have no plaque or calcification 
In my heart or cardiac arteries! 
13 years of Atkins 
Is my saving grace.

Through the years.

With most diets having

I’m glad for Atkins,
And Fasting. 

I’m not a celebrity. 
Not an Influencer. 
No affiliates, no sponsors,
No books, podcasts, or paid coaching. 
I’ve never made any money 
from Low Carb or blogging. 
I’m just a Fatty who found relief 
From Obesity and Diabetes 
From daily control of what I eat 
And how I move my body. 
It’s as easy as we make it!
And it’s never been known to fail.

Has been a daily part of my life
Since March, 2009. 
That’s 13 years! 
I take it very seriously. 
It’s what keeps me strong and healthy. 

I’m going on 62, and take no prescription meds. 
I work full time as a Nurse. 
Not slowing down yet! 


My Induction Story:
13 years ago this week, 
I went to Dairy Queen for a Blizzard,
3 times in 2 days. 
The clerk said “See ya tomorrow!”
And I answered ”No. you won’t.”


I went on vacation, 
not even thinking about dieting
And certainly not thinking about low carb. 
 But on the way home,
I proceeded to get myself 
Stuck in the Grand Canyon -North Rim
For close to 3 weeks total! 
I was in a cute little fishing lodge
That became my second home. 

Looks like I got my”Blizzard “ after all! 


There was no food- no electricity-
Just hard boiled eggs and snow to eat. 
The Interstates were closed 
Due to a late spring snow storm! 

I had some Muscle Milk and pistachios
That I packed for the trip. 
When I made it home,
I had lost 20 pounds 
My friends thought I had gone to a Fat Camp!
Or had a secret Lap Band. 
No and no! 
Just old fashioned Ketosis! 
A dear friend said 
“You just went through Atkins Induction!
 Keep on and see what happens!”

I wore a 3x scrub, 48 jeans. 
I weighed over 230 pounds. 
I didn’t get an accurate starting weight. 
But they didn’t let me ride the Mules
Because I was more than 230. 


I go back to the little lodge 
As often as I can. I’m grateful 
The Universe landed me there 
That fateful day. 

I love to hike and drive 
So I made this blog and called 
“Carb Tripper.”
Like the Beatles “Day Tripper.”
I’ve always got a good reason 
For taking the easy way out. 

I try to be transparent and accountable. 
I post my meals, my face,
And full body shots. 
I post labs- good and bad-
And weight loss numbers and maintenance. 
All things considered-
I’ve done OK! 

There will always be setbacks. 
Up 20 pounds- down 20 pounds…
I’ve had a broken knee 
(With torn ACL, MCL, meniscus)
Ulcers from the Advil I took. 
(I take CBD now for the pain)
Tons of wine. 
(I’m completely alcohol free these days!)
I’ve moved a few times. 
Started different jobs. 
Had a breakup with a BFF. 
Lost a few favorite little friends. 

I’ve worked through COVID 
2 years, and almost died
After the vaccine. 
(I’m still glad I got the jab!)
They think I had COVID 
before it even had a name. (12/19)

If anyone wants to lose weight, 
keep it off forever,
Age backwards (I’m 62 this year)
And just in general thrive-
Maybe give Atkins a try!
